Happy Birthday to ME!!!!!!








This weekend we had my birthday dinner at my mom's house. My mom made my favorite, Mulligan Stew, and she also tried a new recipe of Swiss Steak. It was all delicious!!! Since I am still trying to lose some weight, I told mom that I would try a different kind of cake this year. Now my normal cake is to have a pineapple upside down cake. And this is the first year in I couldn't tell you how long that I didn't have that cake on my birthday. Anyway, I got a recipe from weight watchers and decided to try it. It is called a diet pop cake. Instead of making the cake as directed on the box, you take the mix, my choice was chocolate, and you pour about 3/4 of a can of diet pop, I used diet dr pepper. I also used 2 egg whites, but you don't have to. Mix the batter and pour into greased pan. I used 2 round pans. Bake as directed on the box. For the icing I took sugar free cool whip and 2 containers of sugar free chocolate pudding and mixed them. After icing the cake, I cut the cake into 12 slices. For one slice, it was 4 points on WW. This is alot better than 8 or 9 for a smaller slice of a regular cake.
And it was good, it was a little dry, but we put strawberries on it, and this made it even better!!! And pretty much sugar free.
And the left over icing, I put it in the freezer, and now I have a low fat, sugar free ice cream.
My mom, DJ and Renisa, and Sheryl and Matthew all went in together and got me a new set of dishes. I wanted some square ones, and they got them for me. I love them. Mom also got me some baskets, cause I love to put baskets up all over the place. My hubby got me a mini trampoline, cause I need to exercise and lose some more weight. Me and him got a deal and I got to work extra hard to strive for my weight loss goal. Just __ pounds to go!!!!! I hope that everyone had a great weekend!!!

Happy New Year!!!







Here are a few pics from Christmas. The bottom two are from the Christmas play at the Church. Casey was a snowman and Cody was an Uncle caught off guard. He didn't know that he was going to be singing at the end. So I took a pic of him just moving his lips. I hope that all had a Merry Christmas and that the true meaning of Christmas was shared.
I also wish you all a Blessed New Year!!!! May you keep your New Year Resolutions for longer than a few days. :)
My New Year's Resolution is to just get back on track with everything: Weight Watchers, Housework, Work, and Family stuff. The past few months have been hard to stay on track.
